Ingredients:
2 lbs. Lean ground beef
1 lbs. Ground pork
1 White onion
3 Garlic cloves (or 3 tsp. of minced garlic)
1 tsp. Liquid smoke
1 28 oz. Can diced tomatoes
4 8 oz. Cans of tomato sauce
1 Small can of sweet corn
1 Large can of kidney beans (28 - 29 oz.)
1 Bottle of Fat Tire Pale Ale beer
1 tsp. of corriander (crushed)
1 tbls. of dried cliantro (or finely chopped fresh cilantro)
1 tsp. Chili power (could be more, but, you may get bitched at?)
.25 tsp. cayenne pepper
2 tbls. Flour
1 6 oz. Can of Contadina Tomato Paste
Tapatio to taste (12 - 15 good shakes in the pot)
Prep:
* Chop the onion into chili size chunks
* Crush the corriander
* Drain the can of corn
* Mix the flour with a little water - no lumps!!!
Put it together:
Throw the ground beef, ground pork, onions, garlic and liquid smoke in a large pot
and cook it all until the meat is done. Drain all but a couple tbls. of oil from the pot.
Add:
The diced tomatoes
The tomato sauce
The sweet corn
The kidney beans
The beer :)
The crushed corriander
The cilantro
The chili power
The cayenne pepper
Turn up the heat and mix everything until you get a slight boil then add the flour/water mix, stir it up and bring to a boil. Mix in the tomato paste and tapitio then turn down the heat and let if fester for as long as you can wait.
